Located on a rocky elevation between the Durteint and Voulzie river valleys, Provins occupies a strategic geographical position that was attractive for Roman fortifications.

Later, the city gave birth to Hugues de Payns, one of the co-founders of the Templars (Knight's Templar, or more accurately, Poor Fellow-Soldiers of the Temple of Soloman).

This famed group subscribed to a vow of poverty and dedicated themselves to the aggressive protection of Christians in their pilgrimages, and the "defeat of ignorance."

Over the years Provins and its historical ruins have been chronicled by Marcel Proust, Umberto Eco, Victor Hugo, Honore de Balzac, and others.

Provins offers an interesting enterprise, the production of rose foods, including rose honey, candy, and jam from rose petals.
