Pamplona, Spain

El Encierro (the running of the bulls) takes place every July 6 to July 14.

This is one of the most thrilling events in the world, and it occurs in the week known as the Fiestas de San Fermin. The city fills up fast, so be prepared to make plans early if you want to sleep anywhere but on a park bench.

Six bulls are let go each morning at 8 a.m. near the Plaza Domingo with instructions to head directly to the bullring, down and around a twisted city street or two.

If you decide to run, don't think hiding in a doorway will help, and don't be surprised if you see people taking a shot of the local hooch, pacharan (a liquor flavored with anise seed, coffee beans and vanilla), to keep their courage up.

The other fifty-one weeks of the year, walk around the old part of the city, Casco Antiguo. Pamplona has been the capital of Navarra since the ninth century.

Eat lots of local asparagus, red peppers and enjoy some of the best red wine in all of Spain. Visit the Catedral de Santa Maria, a Gothic cathedral that inspired the first Pimpernel cork backed placemat, and enjoy the beautiful architecture of the Auditorio Baluarte.
